Greektown Garden Sausage and Vegetable Bowl

Ingredients

  • 1 1/2 pounds chicken sausage or tofu sausage cut into 1/2-inch rounds

  • 1 head broccoli cut into florets

  • 1 red bell pepper thinly sliced

  • 1 yellow bell pepper thinly sliced

  • 8 ounces green beans

  • 1 pouch Greektown Garden  

  • 2 tablespoons Olive Oil

  • 1 1/2 cups dry quinoa prepared according to package directions or brown rice

Instructions

  1. Preheat oven to 400°F.

  2. Chop veggies while oven preheats, spread across baking sheet

  3. Sprinkle Greektown Garden on and drizzle with olive oil

  4. Roast for 20-25 minutes, stirring halfway through cooking time.

  5. Cook brown rice or quinoa as directed while vegetables roast

  6. Layer/Combine in bowl (Rice, Veggies and Top with Sausage Slice)
